In fact I consider it a high added value for my profession to know the products of our territory, to understand what is the best time for harvesting fruit, or to bring to the table what the sea offers us. At certain seasons a select variety of fish are unbelievably delicious.
We have a modern and well equipped kitchen with cutting-edge tools that help us to try new recipes for our dishes, but we still believe that if the raw materials are of high quality it is not necessary to intervene.
We try to reduce, where possible, the use of animal fat and we only use extra virgin olive oil.
Founded by Soldani Lido in 1970 from what was then a wine shop, and before then it was a furniture shop.
My memories take me back to that environment, where the old characters of Portoferraio were playing cards in a cloud of smoke, next to a bottle of wine. The frescoed walls by the painter Nello Francesetti, where unfortunately covered in the early restoration works.
In 2020 it will be 50 years, a source of satisfaction for us that we have always worked with modesty and simplicity, hoping that it is not only a goal but an incentive to continue with lifelong passion for this work.
